Today I am going to be sharing a recipe for ensalada de pollo which translates to chicken salad (I refrain from calling it chicken salad because I personally have never tried a chicken salad I like, now ensalada de pollo that's a different story). I wish I could take credit for this recipe but honestly most of "my" recipes belong to my mom or my grandma (on my moms side). According to my mom, the best credit I can give her is to continue to cook her recipes and hacer comida en la casa (cook at home) which truly makes her happy. Hope you enjoy!
Ingredients:

Ingredients:
- Two chicken breasts
- 1/3 of an onion
- One cup of shredded lettuce (iceberg or romaine lettuce is best)
- Two shredded carrots
- 1/2 cup of miracle whip
- One can of canned corn (whole kernel)
- One avocado
- Salt
- Pepper
- Tostadas
Optional
- Potatoes
- Peas
Preparation: 30-45 mins
1.Cut your raw chicken breasts into halves (cut vertically) so you are left with 4 pieces. (This helps your chicken cook faster, it also makes the shredding process easier).
2.As your chicken boils add 1/3 of a white onion to your saucepan.
3.While the chicken cooks cut up your veggies: first cut lettuce into a small shred like texture then grab your carrots and shred them with your vegetable peeler.
4.Once your chicken is cooked and cooled, shred your chicken breast and add to a large bowl.
5.Add ALL the vegetables and the miracle whip to the bowl.
6.Stir it all up, finish by adding pepper and salt (I wish I could give you measurements but I'm Mexican-we wing it!).
