Hi friends! Today I am sharing a recipe for Spanish rice also known as Mexican rice. In Spanish rice is referred to as arroz and it is a staple in every Mexican household. I kid you not when I say rice is the true food MVP as it pairs well with any dish or recipe you make.
I wouldn't be honest with you if I didn't mention my love hate relationship with cooking rice, this by far has been one of the dishes that I have truly perfected over time because when I first started my cooking journey rice and I were sworn enemies. I remember my mom always explaining the different variables involved when cooking arroz she would always tell me: "tienes que tener una buena cazuela, tienes que tener paciencia y cocinar el arroz en fuego bajito." Fast forward a couple years I truly live by this advice. I use my best non stick cookware and I have more patience now then when I first started and I recognize the low heat setting on your stove is your friend!
Ingredients:
1 cup of long grain rice (my personal favorite is the mahatma brand)
2 Roma tomatoes
1/4 of a white onion
2 tablespoons of vegetable cooking oil
3 cups of water
1 tablespoon of chicken flavor bouillon
1 teaspoon of tomato flavor bouillon
Preparation: 25-30 mins
1.Pour the two tablespoons of vegetable oil into a non stick frying pan with lid (medium-high heat)
2. Once the vegetable oil is warm drop half of the 1/4 of an onion into the the frying pan
3.Add the cup of rice into the frying pan, stirring occasionally. The rice will start to turn a golden color.
4.In your blender add the tomatoes, the rest of the onion, chicken and tomato bouillon as well as the three cups of water. Blend all your ingredients and add it to the rice, be sure to stir.
5.Change your heat setting to low heat. Rice will begin to boil and finish cooking, remember to leave the lid on and avoid stirring your rice.
6.You can check on your rice by pushing the rice to one side of the pan and determining if the water is fully absorbed. Once the water is fully absorbed your rice is finished!
You can pair your rice with just about any meal! In our house hold rice is common with carne asada, enchiladas, flautas, guisados-literally just about anything. Enjoy!
