Hey everyone! Hope you and your loved ones are staying safe and have adjusted to this new normal. I will be the first to admit this took a lot of adjusting and I consider myself an introvert as it is so I totally sympathize for all the extroverts out there. Major shout out to ALL our essential workers that are grinding every single day and don't have the option to stay home. I appreciate you all and I dedicate this recipe to you! I know you are always on the clock and you would think getting home would mean a break but many of you are moms and dads and full time caregivers so I wanted to make a recipe that requires no more than 10 minutes of your time. The best part is this recipe is a dump and go recipe that allows you to do just that: dump your ingredients and go! Total cook time ranges depending on your heat setting however this will cook on its own as you are at work or you run your errands.
Chipotle chicken and veggies
Ingredients:
- 4 chicken thighs or Two large chicken breast (cut in half vertically)
- 1 cup of chicken broth
- 1 can of chipotle sauce (you can use chipotle peppers however you will have to blend them beforehand so that is why I recommend getting the canned chipotle sauce).
- 1-2 russet potatoes (depending on size)
- 1 large zucchini squash or 2 small Mexican squash
- 1-2 carrots or baby carrots cut in rounds
- 8oz can corn (you can use half of the standard 15oz can)
- 1 teaspoon of garlic powder
- 1 teaspoon of cumin powder
- 1 teaspoon of paprika
Preparation: 10 mins
1.Turn your slow cooker on to your preferred heat setting. If you do low heat it will take 8 hours to cook (perfect for when you are at work). If you do a medium heat it will take 6-4 hours or high which typically takes 3 hours.
2.Place your chicken broth as well as your chicken pieces in your crockpot remember you can use thighs or breasts (I prefer thighs for this recipe simply because they have more fat and won't dry out in your slow cooker).
3.Throw in all of the seasonings don't worry about rubbing it or spreading it the juices will make sure they distribute evenly as it cooks.
4.Cut up your potatoes, carrots and zucchini into small pieces. Typically I do small diced potatoes, carrot rounds and I cut my zucchini into small triangle shaped like pieces (it doesn't really matter how you cut your veggies just cut small pieces so it cooks evenly).
5.Dump your chopped veggies into the slow cooker then finish up by adding the canned chipotle sauce. (Chipotle sauce isn't very spicy if anything it has a sweet tangy taste so if you are looking for spice I recommend adding some serrano peppers or adding a hot seasoning packet).
Let your slow cooker do its magic and when finished you can pair your dish with some white rice or a salad. Don't overthink it! Your slow cooker will do the work and you will get home to a delicious meal.
